My Mother's "Waldorf" Salad

My mother's way of defatting a waldorf salad was to use apples and celery as normal, but to replace the walnuts with thinly-sliced baby corn on the cobs. I don't normally like those, butsliced small they were very good, and had an interesting texture. For dressing, she used reduced-calorie mayonnaise mixed 50:50 with low fat yogurt.
