Vegetable Bake:
1 red onion (only because it needed using)
3 cloves garlic (optional)
Handful cherry tomatoes
1/2 small butternut squash
About 2-3 oz mushrooms
1 potato (again, a soft one that needed using)
150 ml vegetable stock
1 tablespoonful cooking oil (I used walnuts)
3 slices bread
About 100 grammes cheese
1 tablespoonful mixed nuts (was going to be walnuts, but
they'd gone off)
Chop onion (and garlic) and microwave on full power for 4
minutes (or
saute in the oil for about 15-20 minutes, but life's too
short). While this
is happening, peel and dice the butternut squash, dice the
potato (no
need to peel), wipe the mushrooms, and pierce the cherry
tomatoes. Put
everything in the pan with the oil and allow to cook for a
few minutes.
Add stock and bring to the boil. Turn off heat. Sprinkle
with about 40
grammes of the cheese, grated.
In a food processor blend the bread, remainder of the cheese
and the nuts
to make a crumble top.
Put on top of the vegetable mix and bake in a
moderate oven for 30-45 minutes.
(The original recipe was onions and courgettes and potatoes,
and I forget
what else, so you can vary it infinitely. It was GORGEOUS!).
