ABC Soup

 

The ABC in this recipe are Alliums, Broccoli and Cabbage!

 

1 litre water

2 leeks, trimmed and cut into chunks

1 large or 2 small onions, peeled and roughly chopped

As much garlic as you like (!), peeled

˝ medium cabbage, either green or white, chopped

˝ head broccoli, chopped

(If liked) Small tin sweetcorn or ˝ cup frozen sweetcorn

2 teaspoons vegetable bouillon powder

1 teaspoon dried herbs

Pepper

(If you use the bouillon powder, it won’t need salt, you know what commercial stock is like!)

 

Put leeks, onions and garlic (the alliums) into the bottom of a steamer, add the water and seasonings.  Put the chopped cabbage into the middle section, and the broccoli on the top.  Cook on a high heat for 15 minutes.  Put this all through the blender (you will probably need 2 goes) and transfer to a clean saucepan; add sweetcorn, if using.  Bring back to boil and serve.

 

This will keep for several days in the fridge.
